In our vineyard, we cultivate a diverse array of grape varieties, including Malbec, Cabernet Franc, Cabernet Sauvignon, Merlot, and Petit Verdot, each contributing unique attributes to our wine portfolio. Malbec thrives in our sun-drenched terroir, yielding deep, robust berries with rich flavor profiles, while Cabernet Franc’s delicate structure and aromatic complexity flourish in the cooler slopes, producing elegant wines with floral and herbal notes. Cabernet Sauvignon dominates with its bold, tannic presence, thanks to its thick skins and heat-loving nature that enhances its iconic black fruit character. Merlot adds a smooth, approachable dimension, featuring ripe plum and chocolate nuances, and Petit Verdot, with its small, concentrated berries, lends depth and richness to our blends. Together, these varietals embody the essence of our vineyard, showcasing the harmonious interplay of climate and terroir that defines our winemaking philosophy.

Our production process emphasizes meticulous vineyard management and sustainable practices, essential for cultivating our diverse varietals: Malbec, Cabernet Franc, Cabernet Sauvignon, Merlot, and Petit Verdot. Malbec is harvested at optimal ripeness to enhance its robust flavor and deep color, while Cabernet Franc benefits from careful canopy management to preserve its aromatic complexity. Cabernet Sauvignon undergoes a rigorous selection process, ensuring only the highest-quality grapes are vinified, leveraging its rich tannins for a structured wine. Merlot's soft tannin profile is accentuated through gentle handling and temperature-controlled fermentation, promoting freshness and approachability, whereas Petit Verdot, known for its intense concentration, is often co-fermented in smaller batches to integrate its powerful characteristics into our blends. Cabernet Franc, with its vibrant acidity and complex aromatics, adds elegance and a bouquet of floral notes, perfectly balancing the bolder components of our blend. The Cabernet Sauvignon, our flagship varietal, provides structure and depth, with rich tannins and layers of blackcurrants, cedar, and dark chocolate that define its profile. Our Merlot brings a touch of softness and approachability to the ensemble, showcasing luscious plum and cherry flavors intertwined with subtle mocha nuances. Finally, Petit Verdot contributes dark fruit intensity and a hint of spice, deepening the complexity and finishing our blend with a robust character. Throughout the vinification process, each varietal underwent separate fermentation and was aged in premium French oak barrels, allowing for smooth integration while retaining the integrity of their distinctive profiles. The final assemblage reflects our commitment to craftsmanship, resulting in a wine that embodies the essence of our terroir and the meticulous care taken throughout the growing and winemaking processes.

Nestled in the picturesque Judean Foothills, the vineyards benefit from a unique terroir characterized by a combination of limestone and clay soils, elevations that promote diurnal temperature variation, and a Mediterranean climate. The Cabernet Franc thrives in these conditions, lending its herbaceous and floral notes that highlight the wine's complexity. Merlot grapes, known for their lush fruit profile, thrive in the warmer exposures while the Malbec, with its rich color intensity and dark fruit flavors, flourish at a slightly lower elevation where the cooler night temperatures enhance its acidity. Petite Verdot adds depth with its bold structure and spicy undertones, making this blend a harmonious expression of the regional climate and soil diversity.

The production of this blend involves meticulous hand harvesting followed by careful sorting to ensure only the most pristine grapes make it into the fermenters. Each varietal is vinified separately to highlight its unique characteristics before being blended. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the fresh fruit qualities, while a portion of the blend undergoes malolactic fermentation to soften the wine’s acidity and enhance mouthfeel. After fermentation, the wine is aged in a combination of French and American oak barrels for 12-16 months to impart subtle vanilla and spice nuances while allowing the tannins to integrate seamlessly, resulting in a well-rounded final product.

In crafting this blend, my objective was to marry the distinct qualities of each varietal to create a wine that reflects the essence of the Judean Foothills. The Cabernet Franc offers a floral and herbal backbone, which complements the velvety richness of the Merlot. Malbec contributes an intense fruitiness, with dark plum and blackberry notes, bolstered by the dramatic structure provided by Petite Verdot. The final blend boasts a deep, ruby-red hue with aromas of ripe berries, violets, and subtle hints of spices. On the palate, it reveals layers of complexity with well-integrated tannins, a balanced acidity, and a lingering finish that beckons another sip. This wine is a testament to our dedication to quality and the unique terroir from which it hails.

The warm days and cool nights contribute to optimal ripening, allowing Syrah to flourish in the well-drained, clay-rich soils, yielding full-bodied wines with rich dark fruit and spice characteristics. Cabernet Franc, known for its adaptability, benefits from the moderate climate, producing lighter-bodied wines with vibrant acidity and herbaceous notes. Petite Syrah, characterized by its small berries and high tannin levels, produces bold, inky wines with deep flavors of dark fruit and chocolate. Our commitment to meticulous vineyard management, including careful canopy control and irrigation practices, maximizes the unique terroir of the Judean Foothills, ensuring a premium harvest that reflects the distinct character of this remarkable region.
